Boston Butt Pulled Pork on the Kamado Joe Jr

This pulled pork holds a flavour that only the Kamado Joe could create. Serve with homemade coleslaw, toasted brioche buns and bbq sauce for the most amazing pulled pork burgers!
Ingredients
- Boston Butt Pork
- Mustard
- BBQ Spice Mix
Instructions
- First place your Boston butt on a chopping board and dollop 3 teaspoons of mustard onto the pork and rub that all over.
- Now add your BBQ spice mix to cover the pork. Make sure it is completely covered as when the pork cooks this mix will create a nice bark on the edge of your pork.
- Heat up the Kamado Joe Jr up to 300F
- Once the BBQ has reached 300F attach your deflector and place the pork on top .
- Cook the pork for a couple of hours until the internal temperature is at 160F
- When the temperature probe reads 160F remove your pork from the Kamado Joe Jr and double wrap it in foil, then return the pork back to the Kamado Joe Jr for another 3 or 4 hours until it becomes really soft and tender.
- When the pork is completely cooked remove it from the Kamado Joe Jr and its foil wrap.
- Place it in a new foil tray and wrap again in foil.
- Now cover the foil wrapped pork in towels and place in a warm box. And leave to rest for as long as possible.
- When you're ready remove the pork from everything it's wrapped in and prepare to serve.
