Chocolate Guinness Cake

Here we have an adaptation from the classic Nigella Lawson Guinness cake. Cooked solely on the Kamado Joe with a smoked whipped cream topping.
Ingredients
- 150g of icing sugar
- Flour 500g
- High quality brandy
- cream
Instructions:

- Place your cake tin (with all the batter in) into your Kamado Joe. You will want to keep the cake in the BBQ for roughly 45 minutes at about 160 degrees.
- Now remove your cake from the Kamado Joe and leave it to rest.
- It's time to infuse some cream! Retrieve a decent sized piece of charcoal from your Kamado Joe, shake off any unwanted ash and add it into a sealable jar with your cream. Make sure that your charcoal is high quality so that you don't have anything nasty coming out of it.
- Leave your cream for 20 minutes.
- Strain the charcoal from your cream. Then add the cream into a big bowl.
- Using an electric mixer, begin whipping your cream. Add 150g of icing sugar and a bit of brandy intermittently.
- Once your cream is fully whipped and your cake is cooled you can start topping your cake with that delicious cream.
