Ultimate T Bone Steak

My wife said, "This is the best steak I have ever had!" Now, we have eaten in many fine restaurants, so for her to say that was something special. The T-bone was from a local farm, and was a rare breed, so it needed treating with care. We cooked it using the reverse-sear method and this resulted in an amazing taste, perfectly cooked. mmmm
Ingredients:
- 1 LARGE T-bone steak
Instructions:
- Firstly, preheat your Kamado Joe BBQ grill to 250F.
- Cook your steak until the internal temperature is 110F with the grill lid closed
- Remove your steak from the grill and wrap it in foil to maintain its heat
- Once the steak is out of the grill raise the temperature to anywhere between 500-660F, then open all the vents to get a fire going.
- To get the best sear place the grill tray as close as possible to the coals, or you can sear directly onto the coals if you want.
- Begin searing on all sides including the edges and the bone.
- Don't be afraid to let the flames envelop the steak, this will help give a real smokey flavour to the steak.
- Keep searing the steak until you’re happy with the cook.
- Now carve your steak and plate with any sides you choose then finally you can enjoy a perfectly cooked medium rare steak!
